Hello! My name is Fay Millar, and I am the face behind Gingerbread World. I also run a bespoke cake business, Brighton Cakes, making hundreds of cakes. I have created everything from the Brighton i360 and the Harry Potter sorting hat to Paddington Bear and Lionel Richie out of cake.

But every year, I also make hundreds of gingerbread houses. It was something that was born out of necessity in a way. When my marriage imploded in spectacular fashion (though that’s a story for another day!) I wracked my brains for something I could do with the kids and which would also earn me a bit more money. I hit upon gingerbread and downloaded the first recipe and template from the internet I came across. A bit of trial and error later, the kids loved it and we had an awesome gingerbread house design.

I started teaching classes at Christmas for parents and their children and it was SO MUCH FUN. From there it evolved slowly into branded corporate gingerbread houses for businesses who wanted to thank their clients in an unusual way and bespoke creations for those looking for something a bit different to your average Christmas cake. And thanks in a surprising way to Covid and lockdown, we ended up making hundreds of gingerbread kits and conducting live zoom workshops.

Gingerbread is something I’ve always loved and creating amazing gingerbread houses and builds for the public is a fabulous way to share that passion with you. While gingerbread runs mainly at Christmas I do actually make it all year round when not making cakes. Gingerbread World is the gingerbread arm of Brighton Cakes, founded in 2013 by little old me, Fay Millar, when I decided to swap my journalist’s notebook for a wooden spoon and some serious baking. I’m entirely self-taught, having loved baking with my mother from an early age. Jam tarts as a five-year-old gradually morphed into celebration cakes, sculpted cakes and sugar flowers and eventually a love of gingerbread. 

My hand-decorated gingerbread houses and custom-designed cakes are delivered around the South East and beyond.

Our philosophy

It’s simple really – to make seriously awesome gingerbread houses with a dollop of love, a spoonful of care and attention and a big pinch of fun to exceed your expectations and make your Christmas really sparkle.

Quality is of paramount of importance but so is the desire to create gingerbread houses with a bit of “standoutishness” about them. We also like to make sure they taste amazing too and we have spent ages perfecting (and testing) our recipe.

We use high quality ingredients, and don’t scrimp on flavour. The eggs are farm-reared and free range, and we use Tate and Lyle sugars and Callebaut Belgian chocolate.
