Chewy Chocolate Chip Cookies

Think of a well-known high street cookie company beginning with M and these chewy chocolate chip cookies are the superb homemade equivalent

Ingredients
  

  • 125 g Unsalted butter
  • 120 g Soft brown sugar
  • 110 g Caster sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 220 g Self-raising flour
  • 0.5 tsp Salt
  • 200 g Milk chocolate drops

Instructions
 

  • Line two baking trays with greaseproof paper and preheat the oven to 200c (180c for fan-assisted ovens)
  • Beat together the butter and sugars in a large bowl until pale and fluffy, then add in the egg and vanilla. Mix until well combined.
  • Sift the flour and salt together then mix into the butter/sugar mixture until a soft dough forms. Finally, stir through the chocolate drops
  • Break into roughly 24 pieces. They should be about walnut sized. Roll into balls and place them on the baking sheets. Remember to leave space between them as they will spread during cooking.
  • Bake them in the oven for around 6-8 minutes. Give them a minute less and they'll be super chewy, leave them in for 10 minutes if you prefer them crunchy.
  • Leave them to cool on the trays for around 15 minutes, then transfer to a wire rack to cool completely. Store in an airtight container and they should last for around 5-7 days, if not eaten before then!
